Wing Lei’s (Wynn) vegan menu was very tasty. The kung pao Gardein is one of the best uses of the famed meat substitute that we have found. The staff was professional and attentive and the atmosphere was sophisticated. Our highest recommendations.

Our dinner at Lakeside (Wynn) fell short of previous experiences. There were several reasons for our negative impression. Our food order was messed up three times, a server parked a tray of lobsters on death row next to our table, and we were seated next to an intoxicated man who was very loud and offering high fives to strangers as if he were Barney Stinson. Generally speaking, the atmosphere of the restaurant did not live up to its “fine dining” label (club-like music, poor attention to detail by server, etc).

The food was tasty, although Erin objected to the use of cumin in the Gardein dish. Unfortunately, our meal was a rare instance of disappointment at a Wynn establishment.

Our lunch at Country Club Restaurant (Wynn Las Vegas) looked so good that a group of non-vegetarians sitting next to us wanted to order the same thing (until he found out that it was a vegan dish). The golden beat carpaccio paired earthy beats with sweet pomegranate drizzle and salty pistachios and was unlike anything we had tried before. The view of the 18th hole of the Wynn golf course made us temporarily forget we were in the desert.

Wazuzu is one of our favorite restaurants at Wynn Las Vegas. Tonight we ordered some of our past favorites and a few new dishes. The dim sum was very nice, but the drunken noodles and gardein dishes held their place as our favorites.

Mizumi at Wynn Las Vegas is a beautiful restaurant with our favorite Japanese vegan menu. The sushi is creative and delicious and they have some of the best Gardein dishes we’ve tasted.

Il Margutta has been Rome’s premier vegetarian restaurant since 1979. To our delight, they have recently added a vegan set menu. The seven course (!) meal was served over nearly two hours. The menu offered an impressive variety of creative and delicious dishes.

To begin, the chef sent a complimentary couscous appetizer.

The first course was a guacamole cream with crispy corn wafer and soya sprouts.

Red, green, and white gazpacho cocktail with fresh vegetables and basil ice cream. So good.

Spaghetti with figs. Fresh figs are awesome.

Brown rice with ginger.

Seitan palliard with baked potatoes and wild herb sauce.

Golden vegetables in tempura batter with sweet and sour sauce.

Mosaic of fresh fruit and sorbet.

The photos pretty much say it all: il margutta is an unparalleled, world class vegetarian restaurant. When in Rome, eat there.

Food shortages could force world into vegetarianism:

Leading water scientists have issued one of the sternest warnings yet about global food supplies, saying that the world’s population may have to switch almost completely to a vegetarian diet over the next 40 years to avoid catastrophic shortages.

Humans derive about 20% of their protein from animal-based products now, but this may need to drop to just 5% to feed the extra 2 billion people expected to be alive by 2050, according to research by some of the world’s leading water scientists.

“There will not be enough water available on current croplands to produce food for the expected 9 billion population in 2050 if we follow current trends and changes towards diets common in western nations,” the report by Malik Falkenmark and colleagues at the Stockholm International Water Institute (SIWI) said.
